Fall, the football season and tailgating all go together. A good tailgate is the perfect way to enjoy good food, good times and good friends. Try some of these recipes at your next tailgate.

GREAT GUACAMOLE

  Ingredients:
    2 large ripe avocados
    1 to 2 teaspoons lime or lemon juice
    1/2 teaspoon salt
    1/8 teaspoon garlic powder
    pinch of cumin
    1/2 teaspoon Worcestershire sauce
    1/2 cup sour cream
    bag of tortilla chips

Peel and mash avocados. Add other ingredients and mix. Makes about 1 to 2 cups. Serve with tortilla chips.
 


 GOURMET GREEN SALAD

  Ingredients:
    1 small head lettuce
    1 cup celery, diced
    1/2 cup diced green onion
    1 (10-ounce) package frozen peas, thawed
    1 (6-ounce) can sliced water chestnuts, drained
    1/2 cup lite mayonnaise
    1 1/2 cups lite dairy sour cream
    1/2 cup grated Parmesan cheese
    1/4 cup crumbled, cooked bacon

Break lettuce into pieces and place in bottom of a round serving dish. Layer celery, green onions, peas and water chestnuts. In a small bowl mix mayonnaise and sour cream. Spread over vegetables. Sprinkle Parmesan cheese and bacon on top. Cover with plastic wrap and refrigerate overnight. Toss before serving. Serves 6 to 8.

 


 HOT CIDER

  Ingredients:
    2 quarts apple cider
    1/4 cup brown sugar
    1/3 cup honey
    8 cinnamon sticks
    3 fresh apples finely diced
    extra cinnamon sticks for garnish (optional)

Simmer cider, sugar and honey together, stirring until sugar and honey dissolve. Add cinnamon sticks and diced apples and simmer together for an additional 1 to 2 hours. Pour into thermos and take with you to the game.
