Ingredients:

  • 1 medium onion, chopped
  • 1/2 teaspoon salt
  • 2 pounds ground beef
  • 1 (10 3/4-ounce) can condensed tomato soup
  • 2 (10-ounce) cans mild enchilada sauce
  • 1 cup water
  • 2 to 3 8-inch flour tortillas
  • 2 cups (8 ounces) shredded cheddar or mozzarella cheese

Instructions:

  1. Brown the Meat: In a Dutch oven, over an open fire or stovetop, brown the ground beef with the chopped onion and salt. Once browned, drain off any excess drippings.
  2. Add Sauces and Simmer: Add the tomato soup, enchilada sauce, and water to the meat mixture. Stir to combine, and let it simmer for 5 minutes.
  3. Layer the Pie: Spoon 1/4 of the meat mixture into a medium bowl. Set aside. In the Dutch oven, arrange a layer of flour tortillas over the remaining mixture, followed by a layer of shredded cheese. Repeat this process, alternating layers of meat mixture, tortillas, and cheese, until all ingredients are used.
  4. Melt the Cheese: Replace the lid on the Dutch oven and let it simmer for 7 to 10 minutes or until the cheese is melted and the tortillas have softened.
  5. Serve: Once the cheese is melted and the pie is bubbling, serve your enchilada pie hot with the remaining tortillas as a side bread.
