Meat Loaf in an Onion – An Unusual Family Treat

Method: Foil cooking

Time: 40 minutes

Ingredients:

  • 1 pound lean ground beef
  • 1 egg
  • 1/8 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 4 medium onions
  • 2 tablespoons chopped onion (from centers)

Instructions:

  1. Prepare the Onions:
    • Cut each onion in half horizontally.
    • Remove the centers, leaving a 1/2-inch shell.
    • Chop the removed centers and set aside.
  2. Prepare the Meat Mixture:
    • In a medium bowl, mix lean ground beef, egg, pepper, salt, dry mustard, and 2 tablespoons of chopped onion.
  3. Fill the Onion Shells:
    • Spoon the meat mixture into 4 onion halves, rounding the tops.
    • Place the remaining onion halves on top to create a complete onion shape.
  4. Wrap in Foil:
    • Cut three 12 x 14-inch rectangles of heavy-duty foil.
    • Place each filled onion on a piece of foil.
    • Bring ends of foil up over the onion and fold down in small folds.
    • Press sides of foil close to the onion, flatten ends, and roll toward the onion.
  5. Cook:
    • Cook on hot coals for 15 minutes on each side. Then check to see it is done.  If it still needs more time, wrap it and put it into the hot coals again.
    • Carefully unwrap and serve.
