Warm summer days call for light meals that require a minimum of time over a hot stove. Refresh family and friends with these freezer delights aimed at beating the heat. 

 

Surprise Zucchini Soup

  • 1 onion, chopped
  • 2 tablespoons butter or margarine
  • 2 cups chicken broth
  • 2 cups sliced zucchini (unpeeled)
  • 1/8 teaspoon celery salt
  • 1/8 teaspoon garlic salt
  • 1/2 cup chopped fresh parsley
  • Sour cream & chives (optional garnish)

In a large skillet, saute onion in butter or margarine until transparent. Add broth, zucchini and seasonings. Simmer until zucchini is tender. Cool slightly. Put through food processor, adding parsley as mixture purees. Freeze in plastic freezer bags. To serve, thaw until liquid. Garnish with sour cream and chives. Makes 6 servings.

 

Raspberry Slush

  • 3 cups water
  • 1 ½ cups sugar
  • 4 cups orange juice or apricot nectar
  • 1 (20-ounce) can crushed pineapple with juice
  • 2 bananas, diced
  • 2 (10-ounce) packages frozen raspberries
  • Lemon-lime soda for serving

Heat water and sugar until sugar dissolves. Stir in orange juice or nectar, pineapple, raspberries and bananas. Mix well. Freeze in standard-sized ice cube trays. When firm, pop from trays and store in plastic freezer bags in the freezer.

To serve, place 2 to 4 cubes in a glass and fill with carbonated soda. Makes 10 to 12 large servings.
