Watching the season change is like watching a whole new world unfold. With its exciting golds, rusts, bronzes and reds, autumn is the favorite season of many. Take a walk in the woods with your family this fall to experience nature’s canvas. A picnic lunch will keep your energy level high; here are a two delicious items you might want to take along.
Stuffed Sandwiches – A Picnic Favorite
- 4 to 6 hard rolls
- 1 (12-ounce) can luncheon meat, chopped
- 1 ½ cups shredded Cheddar cheese
- 2 tablespoons sandwich spread
- 2 tablespoons pickle relish
In a medium-sized bowl, mix meat, cheese, spread and relish. Hollow out center of each hard roll and fill centers with meat mixture. Wrap in plastic wrap until serving time.
Pudding Salad – A Sweet & Fruity Side Dish
Ingredients:
- 1 (20-ounce) can pineapple chunks (in juice)
- 2 bananas, sliced
- 1 cup shredded coconut
- 1 (11-ounce) can mandarin oranges, drained
- 1 (16-ounce) can fruit cocktail (with juice)
- 1 (3.75-ounce) package instant lemon pudding mix
In medium bowl combine pineapple plus juice with bananas, oranges, fruit cocktail with juice, and coconut. Stirring slowly, sprinkle pudding mix into fruit mixture. Let stand 5 minutes. Pudding will set in the fruit juice. Makes 6 1/2 cups.
Preheat oven to 350 degrees. In oven melt butter in 9×13 pan. Sprinkle cracker crumbs over butter. Pour milk evenly over crumbs. Top evenly with chocolate chips, coconut, and nuts. Press down gently. Bake 25 minutes, or until lightly browned. Cool thoroughly before cutting into squares. Makes 24 bars.
