What started out as a day for honoring and remembering those who died in wars has become a day to honor our loved ones, too. Memorial Day is also the jumping off point of the summer season. What better way to start the season than a memorable get-together with family and friends for a delicious barbecue to conclude a day of remembering. Here are two popular items for the barbecue grill that everyone will love. 

Make the Teriyaki Marinade

A good marinade infuses the fish with bold flavors while keeping it tender and juicy.

Ingredients:

  • 1 cup lite soy sauce
  • ½ cup sugar
  • ½ cup water
  • ½ tablespoon fresh ginger, shredded
  • 1 clove garlic, peeled and crushed
  • 2 green onions, chopped
  • 1 tablespoon sesame seed oil

Instructions:

  1. In a medium saucepan, combine soy sauce, sugar, and water. Bring to a boil and stir until sugar dissolves (about 5 minutes).
  2. Add ginger, garlic, green onions, and sesame seed oil. Stir and let cool.
  3. Transfer to a glass jar and refrigerate. This marinade is enough for 3 pounds of meat, chicken, or fish.

Prepare the Marinated Ahi Tuna

Ingredients:

  • Teriyaki marinade (recipe above)
  • 1 lemon (juiced)
  • 4 (6- to 8-ounce) ahi tuna steaks
  • Vegetable oil (for grilling)

Instructions:

  1. In a gallon-sized resealable bag, combine teriyaki marinade and lemon juice.
  2. Add the ahi tuna steaks, seal the bag, and refrigerate for at least 1 hour (longer for deeper flavor).
  3. Preheat the grill to high heat and brush with vegetable oil to prevent sticking.
  4. Remove tuna from the marinade and grill for 2½ to 4 minutes per side, depending on thickness and desired doneness.
  5. In a small saucepan, boil the leftover marinade for a few minutes and serve as a sauce.

Serve with Grilled Pineapple

Serve grilled pineapple as a juicy side dish. Peel and core a fresh pineapple; cut into slices 1/2 inch thick. Cook on hot barbecue until lightly browned on each side. Serve warm.
