Cold, subfreezing nights call for casseroles and dishes hot and bubbling.
These “comfort foods” for icy winter evenings are good any time of the year but will be especially welcome after a hard day’s work or play out in the cold.
Chili Chip Casserole
A hearty, spicy dish packed with flavor and crunch.
Ingredients:
- 1 pound hamburger
- 1 (8-ounce) can tomato sauce
- 1 (16-ounce) can chili con carne
- 3 cups corn chips
- 1 small jalapeño pepper, chopped
- Grated cheddar cheese
Brown hamburger in a skillet over medium heat. Drain off drippings. Add tomato sauce and chili con carne. Stir in 1 cup corn chips. Heat until warm. Add chopped pepper and grated cheese for added zip. Top with remaining corn chips. Serves 4-6.
Chicken-Ham Broil
A protein-packed meal that’s quick, satisfying, and full of flavor.
Ingredients:
- 2 whole skinless, boneless chicken breasts
- 2 slices ham (½-inch thick)
- 2 slices Swiss cheese (⅛-inch thick)
- 1 tomato, sliced (or substitute 2 cups mixed salad greens)
Broil chicken breasts until cooked thoroughly. Top each breast with a slice of ham and a slice of cheese. Broil until ham is hot and cheese is melted. Serve with sliced tomatoes or salad. Serves 2.
Parmesan Sesame Bundt Loaf
A savory pull-apart bread that pairs perfectly with any meal.
Ingredients:
- 2 dozen frozen bread dough rolls
- ¼ cup melted butter or margarine
- 1 cup grated Parmesan cheese
- 1 tablespoon sesame seeds
Thaw the dough for 2 hours. Roll each piece of dough in butter then cheese. Place in layers in a bundt pan which has been sprayed with nonstick cooking spray and sprinkled with sesame seeds. Cover rolls with plastic wrap and let rise until double in size. Bake at 350 degrees 25 minutes, or until golden brown. Remove from pan while still warm.
