Here are some unique cookies you’ll definitely want to try. To assemble, prepare both doughs. Form 1 1/4-inch balls with the peanut butter dough. Oil your hands and flatten the dough balls on a cookie sheet. Press a ball of oatmeal dough on top of the peanut butter dough. Bake at 350 degrees F. until golden brown, about 8 to 10 minutes. Makes 5 to 6 dozen. (Note: These two recipes also work well as “singles.” Follow the same baking directions.) 

Peanut Butter Crunchers

Ingredients:

  • ¾ cup butter or margarine
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla
  • ¾ cup crunchy peanut butter
  • 1 ¾ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Beat butter and sugars until creamy. Stir in egg, vanilla and peanut butter. Combine flour, baking soda and salt in a separate bowl and add to mixture. Stir until mixed. 

Oatmeal Crisps

Ingredients:

  • 1 cup butter or margarine
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups oatmeal
  • 1 cup chocolate chips

Beat butter and sugars until creamy. Stir in eggs and vanilla. Combine flour, baking soda and salt in a separate bowl. Add to mixture. Add oatmeal and chocolate chips. Stir until mixed.
