“Watermelon” with Edible Seeds: Sherbet Watermelon
- Lime sherbet
- Raspberry sherbet
- Chocolate chips
Line a round glass bowl with plastic wrap. Spoon softened lime sherbet around the bottom and sides, 3/4-inch thick, smoothing as you go. Let harden in the freezer. Mix softened raspberry sherbet and chocolate chips together and spoon inside lime sherbet “rind.” Freeze for 1 1/2 to 2 hours. Unmold, remove plastic wrap, and slice into watermelon wedges.
Pineapple Boat
A fun and elegant way to serve fresh pineapple at your end-of-summer picnic. This easy-to-make treat can be served with maraschino cherries for a colorful and festive touch.
Ingredients:
- 1 pineapple (for every 4 servings)
- Maraschino cherries
Serve fresh pineapple in an easy, elegant way. Cut pineapple in quarters lengthwise. Remove core from each quarter. Using a crescent-shaped knife, slice each quarter between fruit and rind to detach fruit. Leave rind intact. Slice fruit vertically, leaving it in pineapple. Place on plates. Slightly push each section in alternating directions. Skewer maraschino cherries on toothpicks in each pineapple piece. Makes 4 boats.
