Pancakes with a Nutritious Twist

Add berries, sliced peaches, pineapple, chopped apples, nuts, raisins and bits of ham to pancake batter for extra nutrition and great taste. Or pour pancake batter on a grill and sprinkle extras on top. You can prepare several varieties of pancakes using the same batter. Roll one or two up in a napkin to take with you.

Waffle-Iron Breakfast Hack

Place several strips of bacon on a waffle iron. Cook until done and then remove bacon. Remove excess grease with a folded paper towel. Slip bread slices in a mixture of 2 beaten eggs mixed with 2 tablespoons of milk. Bake as waffles. Serve with bacon slices on the side. Wrap and go.

Commuter Breakfasts – Grab & Go Combos

Before you rush off, try something tasty and full of nutrients to eat in a hurry or on the road. These combinations will help you save time and eat nutritiously.
 

  • Whole-wheat bread + slice of cheese
  • Yogurt + a bagel
  • Crackers, cheese, and carrot sticks
  • French roll + salami or liverwurst + milk
  • Celery sticks filled with peanut butter or cheese spread
  • Scrambled egg burrito: Wrap scrambled eggs in a flour tortilla and add green chilies for flavor.
  • Pita pocket eggs: Scrambled eggs + chives + sour cream or plain yogurt inside a pita.
  • Soup & toast: A mug of cream-of-potato soup with whole-wheat toast.
  • Cantaloupe breakfast bowl: Fill half a cantaloupe with granola and milk for a refreshing, nutrient-packed meal.
