Looking for some new breakfast ideas? One of my favorites, which is quick and easy is breakfast in a muffin tin. You will find this much easier and quicker than cooking it all on top of the stove.
Muffin Tin Breakfast – No Mess, No Fuss
Bake breakfast in non-stick muffin tins. To prepare breakfast for three to six people, preheat oven to 375 degrees. Line six muffin cups with a round slice of ham about the size and thickness of a bologna slice. Break egg onto each piece of ham. Salt and pepper egg. Line six more muffin cups with paper liners. Fill each 2/3 full with muffin batter. Bake 15 to 20 minutes or until eggs are desired firmness and muffins are golden brown.
Breakfast Parfait – A Healthy Start
In a parfait glass, layer granola, yogurt and fruit.
French Toast Sandwich – A Fun Twist on a Classic
Make French toast and freeze. In the morning, put two pieces in the toaster. When they pop up, place cheese and ham slices between them. Wrap with paper napkin. Napkin comes in handy for wiping fingers.
Sausage Stack – A Sweet & Savory Combo
Top-toasted English muffin halves with cooked sausage patties, pineapple slices and shredded cheese. Broil until cheese melts.
Quick Scones – A Fast & Tasty Treat
Cut English muffin halves in quarters and dip in pancake batter. Fry in 1/2 inch of oil for scones. Serve with whipped honey and margarine or butter spread, powdered sugar or syrup.
