Muffin-Tin Breakfast

There’s nothing easier or more simple to do than preparing breakfast in a muffin tin. It is so quick and effortless — everything is baked in a muffin tin, and there is no muss or fuss over the stove.

Ingredients:

  • 6 eggs
  • 6 thin slices of ham
  • Muffin batter

Line the muffin tin with 6 paper liners and fill the liners about 2/3 full with batter. Lightly oil the other 6 muffin cups and place one slice of ham in the tin, forming a cup shape so that you can drop an egg into each. Crack an egg on top of each slice of ham; bake your breakfast in the oven at 375 degrees for 15 to 20 minutes, or until the muffins are baked and the eggs are at the desired firmness.


Quick French Toast Sandwich

For another quick and easy breakfast, prepare ahead of time several slices of French toast as you normally do. Freeze the slices and then when you need a fast, delicious breakfast, pop one into the toaster, top with slices of ham and cheese, and you’re out the door.


Rolled Egg Sandwich

A leftover hot dog bun will combine well with other ingredients to make a wonderful rolled egg cheese sandwich. For each portion, scramble an egg into a form that is long and narrow in the pan. Just before rolling it up, place a slice of cooked bacon on top and a little grated cheese. Fold the egg over the bacon and cheese and place in a hot dog bun that has been pre-warmed in the microwave oven. This “hot dog” will be just as tasty as the ones you buy at the ballpark.
