Touchdown Popcorn

Ingredients:

  • 10 cups popped popcorn
  • 1/2 cup chopped nuts (optional)
  • 1 cup dark brown sugar (packed)
  • 1/2 cup light corn syrup
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda

Instructions:

  • Preheat the oven to 250°F.
  • Place popped popcorn and optional nuts in a large bowl and set aside.
  • In a medium saucepan, combine sugar, corn syrup, butter, and salt. Stir and bring to a boil, allowing it to cook for 2-3 minutes until the mixture reaches 250°F (the hard-ball stage).
  • Remove the pan from heat and stir in baking soda.
  • Pour the syrup over the popcorn and nuts, tossing until evenly coated.
  • Spread the coated popcorn mixture into two or three large baking pans.
  • Bake for 30 minutes, stirring every 10 minutes to ensure even coating.

Yield: 10 cups.


 Popcorn Footballs

Ingredients:

  • 1/4 cup chunky peanut butter
  • 1 (10-ounce) package large marshmallows
  • 1 (12-ounce) bag chocolate chips
  • 7 cups popped popcorn
  • Black string licorice
  • 2 tablespoons soft butter

Instructions:

  • Warm the peanut butter in the microwave on low for 1 minute.
  • In a separate bowl, melt the marshmallows and chocolate chips together in the microwave for 1 minute. Stir until smooth.
  • Stir the melted marshmallow-chocolate mixture into the peanut butter.
  • Pour the mixture over the popped popcorn in a large bowl, tossing to coat evenly.
  • Rub your hands with softened butter and shape the coated popcorn into football shapes (8 inches long and 5 inches in diameter).
  • Cut black string licorice into small pieces and press them into the popcorn footballs to create laces.

Yield: 3 football-shaped snacks.
